BUTTERNUT SQUASH PORIYAL
( STIR FRIED BUTTERNUT SQUASH )
*An easy meal great for weeknight dinners. This recipe is the fastest way to make a quick Indian poriyal dish without blending spices from scratch which saves a lot of time *
Prep time : 30 mins
All you need :
1 whole butter nut squash
1 big shallot (sliced)
1 tsp dry curry leaves or 1 sprig of fresh curry leaves
1 tsp mustard seed
4 tbsp Maya Kaimal Madras Curry Indian Simmer Sauce (spicy)
vegetable oil / olive oil
coriander /cilantro (a few leaves)
Direction :
1. Preheat the oven to 400° F. Stab your butter nut squash with a paring knife a few times all around, and bake the whole squash for 45 mins.
2. After the squash is done, cut into half and remove the seeds and dice into medium pieces.
3. In medium heat, put 2 tbsp oil in a pan, add mustard seeds and sauté for 5-10 sec. When seeds begin to pop, add curry leaves and stir ; then add shallots and sauté till light golden brown. [ Do not fry the mustard seeds more than 10 sec; otherwise, they will burn and be bitter.]
4. Add 4 tbsp of Maya Kaimal Simmer Sauce and sauté for 1 min.
5. Add the Butternut Squash pieces and cook it down even more, so that all the flavors come together well.
Let’s plate:
Once the squash is done, plate it, and sprinkle a few coriander / cilantro leaves; and it’s ready to eat.
