SHIITAKE BROWN BUTTER MISO SPAGHETTI.
“A SUNDAY KIND OF MEAL”
Prep time : less than 20 mins
All you need :
3 tbs unsalted butter
1 tbs red or white miso ( your choice)
Shiitake (a handful)
1 shallot
2 garlic cloves ( or opt for garlic chili oil adds extra flavor)
Spaghetti (or any choice pasta)
1/4 cup pasta water
Parmesan cheese
Parsley( or any herb of choice)
pinch of salt ( if needed .Miso is naturally salty)
Directions:
1. Boil the spaghetti for 11 min ( al dente). Keep a close eye on it and make sure to not over boil
2. While the spaghetti is boiling, add butter, shallot, garlic shiitake and cook till the mushroom gives out a little water and onions and garlic turn golden brown.(sometimes i opt for my homemade garlic chili oil here for some spice)
3. Then turn the heat low, add the miso and 1/4 cup pasta water to loosen the miso paste. stir till it has a smooth sheen to the sauce.
4. After the spaghetti is done, directly add it to the miso and toss with some fresh parsley and a hefty grate of parmesan cheese. (Too watery, cook for 3 mins on high heat until the water dissolves. The idea here is for the noodles to get nicely coated with the creamy miso sauce)
*Pro tip: if you added to much miso. don’t worry, just dilute with a some pasta water to cut out the saltiness*
