(BACON, EGG, CHEESE POCKETS)

“NOTHING BEATS THE SMELL OF FRESH BAKED GOODS IN THE MORNING”

Prep time: 1 hr

All you need :

3 tbs unsalted butter

3 strips of bacon (or any other meat)

Everything bagel seasoning (trader joe)

2 tbs of whipping cream or milk

6 eggs

Few sprinkles of pepper & salt

Cheddar cheese ( few slices)

Puff pastry ( home made or bought)

1 egg ( egg wash) or you can use milk ( 3 tbs)

Directions:

1- Beat 6 eggs with the whipping cream or milk.

2-Whisk the egg slowly on low fire. Once it starts to form , take it off the heat and whisk gently to combine and return to heat. Keep on whisking slowly, taking 30 sec break in between whisking and add a dash of salt and pepper . To achieve smooth creamy eggs, you need to constantly whisk on and off the heat. Repeat this step till the consistency gets creamy.

3- You can either fry or bake the bacon. I prefer to bake mine, so that the oil doesn’t splash everywhere. Once it’s done, let it cool down. Cut into small pieces and combine together with the eggs.

4- Once everything cools down, we are going to start to assemble the egg with the puff pastry. Cut pastry into squares . If you bought your puff pastry, it makes and even number of 6 pockets. Place the egg filling and cheese in the middle of the pastry, then place the other side of the puff pastry on top and crimp the edges to seal them together- just like a pop tart!. ( Do not over fill as you don’t want the pockets to open while baking).

5- Pre heat the oven to 400°, with a baking brush , gently brush the egg/milk wash on each pocket and sprinkle “everything bagel seasoning “ as much as you want or you can even top it with any other preferred seasoning .

6-Bake for 15 mins at 400° . Once it’s done let it cool down a little before taking a big bite of it :) !
